Happy September. As I said in Monday’s newsletter, it’s still hot here, but that’s about to change. After this week, I will start incorporating recipes with cozier vibes - soups, anyone?
On that note, I started a thread over on the Chat for you to request recipes for Fall/Winter meal plans. Jump over there to put yours in.
Meal Prep Tip for the Meal Prep Averse
If you can’t (or don’t want to) do all of it on one night, cook all the beef the night you make the first beef recipe and do the same with chicken. This one step will get you ahead. But I’ve also found if I simply prep extra veggies when I’m already in chopping mode, it gives me extra minutes later on in the week.

This Week’s Meal Plan
Ground Meat:
Greek Meatball Sheet Pan Dinner – Ground turkey meatballs with feta and mint baked with grape tomatoes, zucchini and red potatoes.
Sausage and Pepper Burger – The flavors of the sandwich in a burger. Italian Sausage spiced turkey burger topped with sauteed peppers, onions and gooey melted cheese. Served with garlic sweet potato fries.
Chicken Breast:
Salsa Chicken Zucchini Boats – Shredded chicken coated with salsa, stuffed into zucchini and topped with cheese. Served with a Mexican style salad.
Tzaziki Chicken Salad Wraps – Cubed chicken mixed with Tzaziki and tucked into a wrap with spinach, feta, and tomatoes.
