I hope you’re all doing well. Our puppy Bentley is settling in finally after his little drama setback. I’m working on opening a new food truck business. Actually it’s a cute little tap truck to serve wine, beer, cocktails, mocktails and generally anything cold, at weddings, parties and showers. If you’re local, you’ll be hearing about it for sure as soon as it’s delivered in the next 10 days.

This week’s meals are a little more varied than last week. I Looooove the soup this week. I don’t honestly like soup, but growing up in a potato soup vs chicken soup house, I do love this one. I’ve added chicken to it for protein.
The spaghetti squash recipe has a few notes and includes a video for how to safely cut them in half to make the boats.

Ground Meat:
Salsa Verde Turkey Enchilada Skillet - All the flavor of salsa verde enchiladas without all the rolling.
Italian Turkey Spaghetti Squash Boats – Simple meat sauce made with ground turkey fills spaghetti squash boats topped with mozzarella and parm.
Chicken Breasts
Teriyaki Chicken and Broccoli - Easy homemade teriyaki sauced chicken, pineapple, and veggies over rice.
Loaded Chicken Potato Soup – Super creamy soup (dairy free option) with potatoes, bacon and veggies. Top it off with sour cream, green onions and cheese for the full loaded baked potato experience.
