Vietnamese Summer Roll Inspired Salad You Will Love the Whole Summer
One Bowl, Full Meal, Make Ahead Recipe Perfect for BBQs, Picnics and Summer Homes
This time of year, anything that doesn’t require cooking is a fan fave. For this recipe, a rotisserie chicken is your BFF. Pick it up, nosh on the legs (I love throwing them in the air fryer to crisp up the skin) then pull the breast meat off and make this salad.
Inspired by Vietnamese Summer Rolls, it is packed with thin cold rice noodles, veggies, herbs, chicken and a bright dressing. Rather than a heavy peanut sauce, we’re just using chopped roasted peanuts.
Made in advance using the Portable Versions the noodles and chicken absorb all the yummy flavor from the dressing, but the salad won’t get soggy.

Ways to change the recipe to fit your diet & lifestyle…
Portable Salad - Build dressing in the bottom of a large bowl. Add ingredients in this order - chicken, crunchy veggies, lettuce and herbs. Place peanuts in a ziploc or silicone bag on top. Cover with lid or plastic wrap. When ready to serve, add peanuts and toss.
Portable Individual Servings - Use a 1 qt jar and build the salad just like the Make Ahead version.
Vegan - Omit chicken and use Abbot’s Butcher Chik’n instead (cleanest vegan meat sub)
Keto - Leave out coconut sugar or maple syrup and omit rice noodles
Paleo - Omit rice noodles. You can use zucchini noodles instead.
Whole30 - Omit sweetener or use 1 whole date and blend dressing.
Kid Friendly - Leave out herbs but my kids always ate them as long as there was a sweet dressing involved.
The Noodles - Vietnamese style vermicelli (AKA Bún prounounced Boon) is made out of rice, not wheat, and will be found in the Asian area of most grocery stores. Even if you’re not gluten intolerant, I don’t recommend using regular wheat vermicelli because it will change the texture of the salad.
