Hey there and happy Thursday!
I hope you’re having a good week. Before we get into the throes of marketing our new businesses for the holiday season, we took a last minute trip to the Emerald Coast of Florida to rest up and enjoy the last little bit of warm sunshine before the cooler temps really kick in. The perfectly blue skies and palm trees are the inspiration for this week’s Sunshine chicken recipe.
This week we’re using sirloin steak for two recipes. It’s one of the least expensive steaks and because it’s lean you get a lot for your money. It doesn’t need to be cooked well done, so cook it over high heat and very quickly as directed in the recipes.

Boneless Skinless Chicken Breasts
Pesto Chicken Noodle Soup – Like the classic but with a little twist. Serve with your favorite regular or gluten free baguette.
Sunshine Chicken and Carrot Saute with Quinoa Pilaf – It’s like sunshine on your plate with oranges (fresh or mandarin), carrots and a sweet and savory quinoa pilaf.
Sirloin Steak
Garlic Steak Bites and Potatoes with Lemony Spinach Salad – This inexpensive steak cut is transformed into a delicious steak and potatoes meal offset by a simple lemony spinach salad for the base.
Asian Cilantro Beef and Broccoli Stir Fry – Marinated sirloin strips stir fried with broccoli, green onions and garlic with a drinkable Asian inspired sauce. Served over rice.
