Weekly Meal Plan #18 November 28, 2024 (With Leftover Turkey Ideas)
Buffalo Chicken Stuffed Potatoes + Broccoli Chicken Bake + Turkey Taco Salad + Mediterranean Turkey Bowls
Happy Thanksgiving!
I’m sending this a day early so you can use any Thanksgiving leftovers a little more creatively if you want to. (See below.)
I hope you enjoy your time with friends and family this week. Thanksgiving for many years meant inviting people to join us who didn’t have family in town. This was especially true in California where many of us were away from our families.
While I of course now enjoy being with immediate family regularly since we are mostly all back in Texas, it’s been awhile since we’ve had more than our family at the Thanksgiving table. Almost all of our friends and family have the majority of their friends and family in town.
Then yesterday my youngest son brought his really good friend (who happens to be his boss at work) to join us for dinner. As Kyle asked him about his Thanksgiving plans, you could tell he was bummed about having to work tomorrow because both his family’s and girlfriend’s family are celebrating Thanksgiving out of town so he was going to be alone. That made my heart so sad to see but inviting him to join us turned it around. He more than once said “Thank you for inviting me.” 🤗
I’m looking forward to once again extending our table to others!
Notes For This Week
This week’s recipes are designed for two purposes:
Use leftover turkey if you have any in place of cooked chicken or follow meal prep for cooked chicken if you don’t.
To give you a break from the heavy Thanksgiving food with brighter, lighter recipes using ground turkey or chicken for the other two recipes.
What’s For Dinner This Week
Chicken Breast or leftover turkey:
Buffalo Chicken Stuffed Potatoes – Buffalo sauced shredded chicken over baked potatoes with a side of baby carrots, celery sticks and Ranch.
Broccoli Chicken Bake – Broccoli, chicken and cauliflower rice (or regular rice if you prefer) make this a perfectly balanced meal. Use my GF DF Cream of Chicken Soup recipe or buy your favorite organic, real food brand. Pacific Brand has a good one.
Ground beef or turkey:
Taco Salad - Layer lettuce, reheated Mexican seasoned ground beef, tomatoes, cheese, green onions, salsa and sour cream
Mediterranean Turkey Bowls - Layer hummus with cooked and reheated ground beef, sliced cucumbers, shredded carrots, and halved cherry tomatoes tossed with salt, pepper, 1/3 cup EVOO and juice of a lemon
