Italian Beef Stew + Shredded Beef Quesadillas + Sausage & Peppers Stuffed Spaghetti Squash + Warm Pizza Salad
Hey there!
If you’re like me, December is already going too fast. We have so many things happening, it feels like the month is almost over already! I’m having to take the time and purpose to enjoy this festive season rather than just barreling through it staying busy.
Hopefully this week’s meal plans will give you easy options with time to enjoy the festivities.
What’s For Dinner This Week
Stew Meat
Italian Beef Stew – Chunks of tender beef stew meat with carrots, potatoes and green peas. Perfect to serve with crusty sourdough bread (or GF baguette) and a simple salad.
Shredded Beef & Cheese Quesadillas – Shredded stew meat and cheese melted into tortillas served with a Mexican chopped salad.
Italian Sausage
Sausage and Peppers Stuffed Spaghetti Squash – Italian Sausage and sweet peppers sauteed together and stuffed into spaghetti squash then topped off with parm and mozz.
Warm Pizza Salad – It sounds crazy, but it’s actually one of our favorite Salads. Arugula dressed with an Oregano Vinaigrette then topped with pepperoni, Italian sausage and peppers, parm, green onions and cubed mozzarella. If you have leftover bread from stew night, serve it on the side.

Notes For This Week
This week’s proteins are stew meat (chunks of sirloin or chuck roast usually) and Italian Sausage.
If you do nothing else to meal prep this week, pre-browning and cooking the stew meat takes an hour to cook on the stove top or 30 minutes in the Instant Pot. Once this step is done, the two recipes will take only about 30 minutes each.
If you choose to cook the stew meat the same night you use it in the meal, plan for it to take a total of an hour and a half or more.
The Italian Sausage will be cooked with peppers in both recipes. In either or both recipes you can choose to serve with pasta, on a hoagie bun or even on a baked potato if the spaghetti squash or salad don’t vibe with your fam.
