Weekly Meal Plan #20 December 12, 2024
Thai Coconut Chicken Soup + Garlic Chicken & Rice + Ground Turkey Cauliflower Fried Rice + Ikea Inspired Swedish Meatballs
Hey there!
In case you didn’t notice, I got my dates mixed up and sent my Monday newsletter on Sunday! (It was a crazy weekend with family in town and an event with our little tap truck immediately after they left Sunday morning.) I was trying to be proactive setting it to be emailed to my subscribers since I had promised you Holiday Apps & Desserts and somehow thought the 8th was Sunday. Sorry about that. In case you missed it, here it is to go read after this.
Anyway…Can you believe we’re less than two weeks away from Christmas!? I’ve barely started shopping but I’m trying to keep it local and affordable (not always mutually possible) as much as I can.
Since small businesses are really feeling it right now, every little bit helps. Go to a small mom & pop restaurant, coffee shop or boutique and buy gift cards if nothing else. The promise of you (or whomever you’re giving it to) visiting next year is a bonus to the end-of-year income that may help them get through another month.
Now onto dinner. It’s finally feeling like winter in Texas, so it’s making me want all warm things. As I was thinking about this week’s meals, it made me think of some of our family favorites I’ve collected over the years so I’ve included those.
What’s For Dinner This Week
Chicken Breast:
Thai Coconut Chicken Soup – Warming from the inside out, this chicken soup was created one day when I felt a cold coming on. It cleared it right up.
Garlic Chicken and Rice – So easy and so full of flavor! It’s one of our FAVORITE comfort foods. Serve it with steamed frozen broccoli.
Ground Turkey:
Cauliflower Fried Rice – Even if your family balks at cauliflower rice, they will LOVE this. (I honestly only tolerate cauliflower rice.) It’s flavor packed and you can still serve it over rice.
Swedish Meatballs and Mashed Potatoes – As close to IKEA meatballs as you can get. Serve with mashed potatoes. I add cranberry sauce or jam instead of lingonberry since that isn’t as easy to find.
Big changes coming in 2025. Lock in your 2024 subscription rate which will never change even if 2025 pricing does.
Notes For This Week
This week’s proteins are stew meat (chunks of sirloin or chuck roast usually) and Italian Sausage.
If you do nothing else to meal prep this week, mixing and forming the meatballs and precooking the chicken will get you far ahead.
The other recipe components are quite straight forward and shouldn’t take long.
