This week’s meal plans:
Roast:
Balsamic Pot Roast & Veggies with a Simple Spinach Salad – Instant Pot, oven or slow cooker. Whichever you choose, you’ll have a traditional-ish pot roast with leftovers for the tacos later in the week.
Barbacoa Spiced Pot Roast Bowls– Pot roast spiced up and served on Cilantro Lime Rice with an easy slaw and avocado.
Chicken Breast:
Cashew Chicken and Zucchini Stir Fry – Chicken with a sweet and savory sauce stir fried with zucchini and garnished with herbs and crispy roasted cashews. Served over rice.
Chicken Fajita Tacos – Spiced, grilled chicken, peppers and onions on tortillas (regular or GF) with pico de gallo, guacamole and all the trimmings
