California Burger Salad + Gyro Spiced Beef Bowls + Carnitas Street Tacos + Loaded Crispy Pork Fries
Happy Fall, Y’all!
I hope you are all well and settling into the school year rhythm. It’s so odd to me that even though my kids are both out of school, I definitely still feel that rhythm.
Meal plan wise, it’s cooler finally here in Texas so I’m slowly sliding into the foods that come with Fall. Squash and mushrooms, stews, comforting casseroles. While I do have a burger and a bowl still using late summer veggies, I’ve got a recipe you’re going to love that’s full-on comfort food.
As requested, I’m intermittently including roasts and other inexpensive cuts of meat as an alternative to ground meat and chicken breasts. I won’t do this every week unless you all reach out and cheer me on to keep mixing it up.

Since roasts take longer to cook, a little planning is involved and to counterbalance the extra time necessary, when including roasts, I will make it worth your time by using it in two recipes.
This week, both recipes are using pork shoulder (you can use a chuck roast instead if you don’t eat pork) and the same slaw. One dinner the slaw is a side, the other is a topping. So whether you do a full meal prep, if you will make the tacos first, you will have the main elements done for your Loaded Crispy Pork Fries.
Here are a few tips for pork roasts.
Pork shoulder (like chuck roast) is an inexpensive cut of meat that needs to cook for a long time until easy to pull apart.
Pork shoulder is the same as pork butt.
Boneless yields more actual meat but you can definitely use bone-in, just buy 5 pounds instead of 4

California Burger Salad – Pepper Jack burgers served over a salad of arugula, tomatoes, bacon, and Special Sauce.
Gyro Spiced Beef Bowls – Sauteed beef with warm spices over herbed quinoa with tomatoes, cucumbers, feta and tahini drizzle.
Pork Roast: (or sub Beef Chuck Roast)
Instant Pot (or Slow Cooker) Carnitas Tacos – Pork roasted with Mexican spices served street taco style with cilantro, onions, and a tangy slaw on the side.
Loaded Crispy Pork Fries – Leftover pork turned crispy spiced pork served over fries with pickled onions, slaw, avocado and Pepper Jack cheese.
